Préparation de pizzas en quantité pour des flux importants (pizzeria, restaurant de grande capacité, événementiel, traiteur...)
Choix et sélection des ingrédients (fraîcheur, qualité de la farine, de la tomate et de la mozzarella)
Préparation de la pâte (pâtons), étalage manuel et réalisation des sauces et garnitures
Surveillance de la cuisson (maîtrise du four à bois, à gaz ou électrique)
Dressage, découpe et emballage des pizzas avant service
